San Gabriél comes from La Chacra D'Dago and is inspired by the Archangel Gabriel. This red obata coffee varietal uses an anaerobic slow dry process where the beans were fermented with the pulp for 240 hours then dried for 5 weeks. This created a fruitier and smoother cup of coffee scoring 88.5 pts.
La Chacra D'Dago is the only Demeter certified farm in Peru. The certification is used in over 50 countries to verify that biodynamic products meet international standards in production and processing. The fruit trees they plant, both native and exotic, help create a balanced soil for maximum fertility. The trees also help feed the birds, which in turn help control the insect population. This eliminates the use of pesticides, thus creating a self-nourishing and sustainable environment.
The small-scale farm is family-owned and operated. Dagoberto and his family are constantly looking for ways to innovate and create a better coffee.
